Choose a steak that weighs about +/- 250 g per person and 2 cm thick. Remove the meat from the refrigerator ahead of time so that it’s at room temperature when cooked. Heat your grill or pan on high heat and wait until it’s piping hot. Preheat the oven to 160°C. Season the steak on both sides with plenty of salt and pepper. Grill the meat for 2 minutes and then turn it a quarter turn. Grill it for another 2 minutes. Turn the steak over and grill it for 1 minute on the other side. Place the meat in a warm baking dish and cook it in the oven for about 10 minutes, depending on your preferred baking method.
