Steak Andalouse

  • Choose a steak that weighs about +/- 250 g per person and 2 cm thick.
  • Remove the meat from the refrigerator ahead of time so that it’s at room temperature when cooked.
  • Heat your grill or pan on high heat and wait until it’s piping hot. Preheat the oven to 160°C.
  • Season the steak on both sides with plenty of salt and pepper.
  • Grill the meat for 2 minutes and then turn it a quarter turn. Grill it for another 2 minutes.
  • Turn the steak over and grill it for 1 minute on the other side.
  • Place the meat in a warm baking dish and cook it in the oven for about 10 minutes, depending on your preferred baking method.
  • Remove the steak from the oven and let it sit for another 10 minutes under aluminium foil.
