Tempura vegetables

Ingredients Tempura vegetables:

(Serves 2)

• 5 tbsp cornstarch
• 3 tbsp aquafaba
• 150 g self-rising flour
• 250 ml sparkling water
• salt
• vegetables of your choice: mushrooms, peppers, leeks, carrots, cauliflower,…
• sesame seeds
• mint & lime


Heat the fryer to 190°C.
Cut the vegetables into bite-sized pieces. Place all the vegetables in a bowl and add 2 tbsp of cornstarch. Use your hands and mix until all the vegetables are covered with cornstarch.
For the tempura: Mix the aquafaba, 3 tbsp cornstarch, flour, sparkling water and salt together until you have a runny dough that is free of lumps.
Dip the vegetables in the dough and remove with a pair of tongs before placing the vegetables in the deep fryer.
Fry for 5 to 6 minutes until the vegetables are light brown and crispy.
Place the vegetables directly on paper towels and sprinkle them with salt, sesame seeds, lime juice and mint.
